Lentil and Skinny Noodles Soup

This tasty soup is easy to make and protein-filled. You’ll love this delicious soup especially on a cold day.

8 oz package Skinny Noodles (drained and rinsed)
1/2 cup lentil (cooked)
1/4 ~ 1/2 lb skinless chicken breast (cut into small bite size)
1 tablespoons chopped onion
1 cup frozen mix vegetable (or your favorite fresh vegetables)
1 ~ 1 1/2 cups chicken broth
2 tablespoons spoon olive oil

salt and pepper

Parmesan cheese (if desired)

Sauté garlic and onion in olive oil in a skillet on low heat until the garlic turns light brown.
Add chicken and cook until lightly browned.
Add chicken broth, lentil and vegetables.
Bring to a boil, and then reduce heat.
Add Skinny Noodles and let simmer for 3 minutes.
Remove from heat and serve.
Makes 2 servings.
