Garlic Pasta

A great alternative to rice! Try this garlic pasta as a side dish for your entrée. Not only is this very easy to prepare, it’s a great way to cut the calories in your meal.

8 oz “Skinny Noodles Fettuccine type with spinach”
3-5 garlic cloves, peeled and sliced
4 mushrooms, sliced
1 Tbl spoon fresh parsley, chopped
1 Tbl spoon olive oil
salt and pepper
Parmesan cheese (if desired)

Sauté garlic in olive oil in a skillet on low heat until the garlic turns light brown.
Add mushrooms, parsley and cook for 1 minute.
Add ‘Skinny Noodles’ and cook until it is warmed.
Add salt and pepper.
If you desire, pour Parmesan cheese on top.

Makes 2 servings.
