Easy Summer Salad

Perfect salad for the hot summer! Takes less than 5 minutes to prepare. Full in fiber and refreshing...your entire family will love this!

2 8oz package Skinny Noodles (drained and rinsed)
8oz shredded cabbage 
1 cup sliced red and/or yellow peppers
4 Tbsp olive oil
2 Tbsp wine vinegar
salt and pepper to season

Salad dressing: In a small bowl, mix the oil and vinegar. Season with salt and pepper and mix well. Pour dressing over well-drained Skinny Noodles and coat thoroughly.

Add cabbage and peppers to the noodles. Mix well and serve chilled.

Makes 4 servings.
